     Mushroom Malai

Ingredients
5 Cups Mushrooms - White button, washed, quartered
2 Lg. Yellow Onions
8 cloves garlic - crushed
1 hpgTsp. Ginger paste
1/4 C Olive Oil
2 -4 Tbl. Butter
2 Red or Green Chilis
1 1/2 Tbl Basil
1/2 tsp. Coriander
 
1/2 C. Cashew Paste - 1/2 C. Cashews covered in water for 20 min. blend to a paste
1 C. Cream
2 Tbl Tomato Paste
Salt and Pepper to taste
1 tsp. Garam Masala
1/2 tsp Tumeric
1 tsp Cumin powder

Instructions
Wash and quarter mushrooms and set aside. Bring oil to medium heat. While the oil is heating, put 2 lg yellow onions in a processor and process them down to puree. Put onions in the oil and fry for 10 minutes on medium heat.
Process chilis and garlic and put in with onions, fry for approx. 5 more minutes on medium heat. Add Ginger paste and butter, mix well. Add mushrooms and blend completely. Let cook another 5 - 10 minutes.
Add spices to mushroom mixture- Basil, Garam Masala, Tumeric, Cumin, Coriander, Salt, and pepper and heat through another 5 minutes. Add cashew paste. Add cream and stir through, finally add tomato paste and stir until everything is completely blended and heated through, maybe 3 more minutes.
Serving Suggestions
Serve with rice or chapati
