1/4 cup Dried fruit (any combination of raisins, cranberries, cherries)
1/4 cup Blistered Corn
1/4 cup Southwest Caesar dressing
3 cups Grilled chicken
1/4 cup Croutons
Southwest Caesar Dressing
1 cup Mayonnaise
1/2 cup Seasoned rice vinegar
1 Tbsp Brown sugar
1/4 cup Soy sauce
1/4 cup Chipotle en adobo
Instructions
Begin by soaking corn in husk for at least one hour prior starting or overnight. Roast corn in oven at 350F for 20-30 minutes. Peel husks, char corn on grill and remove kernels after allowing corn to cool.
Southwest Caesar Dressing
Place all ingredients in a blender and mix until smooth.
In a mixing bowl, combine greens, dressing, corn, dried fruit and cheese. Salt and pepper to taste. Toss to coat evenly.
Grill chicken to 165F, allow to rest and then slice. Mound salad on plate, add chicken and top with croutons.
