Cook spinach for 8 minutes in a little water. Drain and chop finely. Set aside. Saute onions in large skillet until they begin to color in butter and oil. Add meat and mix with fork to break up chunks of meat. Cook until meat juices in the pan bottom are dry. Add spinach and mix well.
Add eggs, cheese, salt, and pepper and mix well with a spatula being careful not to let eggs stick to the bottom of the pan. Cook for about 4 minutes.
