8 oz. dry elbow macaroni

1 large green or red pepper, chopped
|

3 green onions, chopped
|
|
1 small cucumber, sliced and quartered

1 cup cider vinegar
|

3/4 cup sugar

Instructions |
|
|
Cook macaroni according to package directions, drain and rinse in cold water.
|
|
|
Toss macaroni with chopped vegetables.
|
|
|
In a container with a tight fitting lid, mix vinegar, sugar and salt & pepper (to taste). Shake vigorously until sugar is dissolved.

|
Pour dressing over macaroni, veggie mixture and chill.
