     Texas Caviar

Ingredients
1 Can Black bean (drained and rinsed)
1 Can Blackeyed peas (drained and rinsed)
1 Can Shoepeg corn (drained)
1 small jar jalapeno peppers (chopped)
1 small jar pimentos (chopped)
1 medium onion ( chopped fine)
1 stalk of celery ( chopped fine)
1 Can sliced black olives
1 Can garbanzo beans (drained and rinsed)
 
1 Can diced tomatoes
Cumin
Oregano
Avacado (optional)
Marinade-
1/2 Cup sugar
1/2 Cup vegtable oil
1 Cup Cider vinegar

Instructions
Mix above ingredients. Heat over medium heat until sugar dissolves. Pour marinade over bean and corn mixture. Chill at least 4 hours. Serve with Frito Lay Scoops
