     Brown Stew chicken

Ingredients
6-10 Chicken pieces - Cut up into pieces with skin removed
1 Tomato
1 Sweet Onion
1 Bunch of Scallion
1 Green Pepper
1 cup of Ketchup
(jamaican) chicken seasoning
1/4 cup of soy sauce
2 tbls. flour
 
4 small potatoes - peeled and cut into cubes
cocunut oil
4-5 whole cloves
thyme
3 heaping teaspoons of brown sugar
1 lime

Instructions
Create chicken marinade- chop tomatoes, green pepper, onion, scallion. Mix chicken, chopped vegetables ketchup, soy sauce, lime juice from lime, and liberally sprinkle chicken seasoning. Give a good squeeze so all juices are blended together. Let marinate in fridge for at least 2-3 hours.
Remove marinade (all vegetable pieces) from chicken and set aside. Sprinkle a little more chicken seasoning on chicken pieces. Melt cocunut oil in hot pot (stew pot) and brown chicken in oil for color. Remove chicken and set aside.
Add a little more oil to pan and cook flour in oil. Then add chicken back to pan along with potatoe, thyme and cloves. Cover with water. Let simmer down about 1/2 to 1/4 way until thickened. Now add chicken marinade (with veggies) to pot, along with brown sugar and more water (enough to barely cover veggies)
Let ingredients cook until liquid has boiled down some and has slightly thickened again.
Serving Suggestions
Rice, Sweet Plantains, and Cabbage
