     Red Lentil Curry

Ingredients
2 cups Red Lentils
1 large white onion, diced
1 tbs olive oil
3 tbs curry powder
1 tsp tumeric
1 tsp cumin
1 tsp cayenne pepper
1 tsp salt
1 tsp sugar
 
2 garlic cloves, crushed
1 tsp ginger powder
4 tomatoes, chopped
2 cups water

Instructions
Wash the lentils under cold running water until clear.
Brown the onions in the oil. Then add the spices, stirring for 2 minutes.
Add the tomatoes, and cook for 5 minutes.
Add the lentils and water, cooking until lentils are soft. If the mixture begins to dry out, add additional water.
