Dice chicken into 1/4 inch cubes. In a medium bowl, combine chicken, red onion, tomatoes, green onions, cilantro and chili powder in a large bowl and mix well. Fold in cheese until well incorporated.
Grill all tortillas on one side and set aside. Place tortillas, grilled side down and add half cup to one side of each tortilla and fold over. Heat flat-top grill or frying pan to medium heat, add butter or oil then add tortilla. Grill each until golden brown and melted; set aside to rest for 1 to 2 minutes.
Cut in half and serve with your favorite salsa or hot sauce.
