     Bacon and hash brown egg bake

1lb bacon cut into 1 inch pieces
1 med onion chopped (1/2 cup)
1 med red pepper chopped (3/4 cup)
8oz sliced mushroom
2 tbsp dijon mustard
1/2 tsp salt
1/2 tsp pepper
3/4 cup milk
12 eggs
2lb frozen hash brown, thawed
2 cups shredded cheddar cheese

Cook bacon until crisp. Remove and refridge. In 1tbsp of drippings, add onion, pepper and mushrooms. Cook 4 minutes. Stir in mustard, s and p. In bowl beat eggs with milk.
Spray baking dish and spread half hash browns. Spread onion mix on top. Sprinkle 1 cup cheese. Add remaining hash browns. Pour eggs on top. Cover and refridge 8 hrs or overnight.
Bake 325 uncovered for 50-60 minutes. Sprinkle 1 cup cheese and bacon on top and bake 3-5 minutes longer. Knife in center should come out clean. Let stand 5 minutes.
