2 cups short grained rice (Calrose best), washed and drained
2 1/2 cups water (use less water if using a rice cooker)
2 Tbl rice vinegar
1 Tbl Mirin
1 Tbl sugar
1 tsp salt
Instructions
Combine rice and water in a small covered saucepan. Bring to a boil over medium high heat. Lower heat so the rice simmers. Cook until the moisture is absorbed, about 20 mins.
Mix remaining ingredients in a small bowl to make sugar mixture. Spread cooked rice onto a sheet pan and lightly toss with sugar mixture.
