     Spring Salad with Almonds, Feta, and Blueberries

Ingredients
12 ozs mixed baby greens, washed and dried
2 ozs Feta cheese
1 cup blueberries
2 ozs toasted almonds (or pecans)
2 Tbl raspberry vinegar
1 Tbl shallot, minced
1 tsp dijon mustard
1/4 cup canola oil
salt and pepper, to taste
 

Instructions
Combine the shallot, vinegar, and mustard in a bowl and slowly whisk in the oil. Can also pulse in a food processor. Season with salt and pepper to taste.
Toss with the remaining ingredients.
Serving Suggestions
Serve with strips of grilled chicken breast.
