     Curry Topped Salmon

Ingredients
4 salmon fillets, about 6 oz (175 g)each
scant 1 cup fresh whole wheat bread crumbs
1 1/2 Tbsp curry paste
1 Tbsp chopped fresh cilantro
 

Instructions
Preheat oven to 350 F/180 C. Discard fine bones in fillets, and rinse lightly. Pat dry with paper towel.
Mix bread crumbs, curry paste and cilantro together.
Place each fillet on a sheet of foil and pat the curried breadcrumbs on top of each. Cover with another sheet of foil and place on baking sheets.
Bake for 10 minutes, then remove the top sheet of foil. Cook for 10 minutes longer, or until salmon flakes.
