4 salmon fillets, about 6 oz (175 g)each
|

scant 1 cup fresh whole wheat bread crumbs
|
|
1 1/2 Tbsp curry paste
|
|
1 Tbsp chopped fresh cilantro
|

|
|

|
|
|
|

|
|
|
|
|

Instructions |
|
|
Preheat oven to 350 F/180 C. Discard fine bones in
fillets, and rinse lightly. Pat dry with paper
towel.

Mix bread crumbs, curry paste and cilantro together.
|
|
|
Place each fillet on a sheet of foil and pat the
curried breadcrumbs on top of each. Cover with
another sheet of foil and place on baking sheets.
|
|
|
Bake for 10 minutes, then remove the top sheet of
foil. Cook for 10 minutes longer, or until salmon
flakes.
