4 chicken legs, about 3.5 oz (100 g) each, skinned
1 Tbsp chopped fresh parsley (1/4 Tbsp dry
1 shallot, finely chopped
1 garlic clove, crushed
1 Tbsp tomato paste, blended with 2/3 cups water
2 Tbsp red wine vinegar
1 Tbsp prepared mustard
1 Tbsp Worcestershire sauce
Instructions
Place shallot, garlic, tomato paste mixture,
vinegar, mustard and Worcestershire in a jar. Cover
with screw top lid and shake vigorously until well
blended.
Rinse chicken legs and pat dry. Place in large
ovenproof dish, coating with sauce from jar. Let
marinate for 2 hours in refrigerator, occasionally
re-spooning sauce over chicken.
Preheat oven to 375 F (190C), and cook chicken for
20 to 25 minutes, or until thoroughly done.
Occasionally baste chicken with sauce during
cooking.
