2 cups GF all-purpose flour (I use Really Great Foods All Purpose Flour)
2 cups sugar
1/2 tsp. xanthan gum
1 stick butter
1 cup water
3 1/2 Tbsp. Cocoa
1/2 cup shortening (oil) Crisco
1/2 cup GF buttermilk
1 tsp baking soda
2 unbeaten eggs
1 tsp vanilla
1/2 or 1 tsp cinnamon

Instructions
Mix flour and sugar in mixing bowl. Add xanthan gum. Bring next 4 ingredients to a boil, but don't boil. Pour over flour/sugar mixture.
Combine soda and buttermilk. Add eggs and vanilla to this. Add to mixture above. Mix well. Bake in greased long sheet pan. Bake at 350 for 30-35 minutes. Be sure it is done in the middle. Frost shortly after removing cake from oven.
FROSTING:
1 stick butter
1/3 cup buttermilk
3 1/2 Tbsp. Cocoa
Heat the above ingredients to boiling point, but DO NOT boil. Add: 1 box powdered sugar, 1/2 cups pecans and 1 tsp vanilla.
