     Goat Cheese Fondue

Ingredients
1 cup Goat Cheese
1 cup Cream Cheese
1 cup Shredded Pepper jack Cheese
½ cup Heavy Cream
2 Tbspn White Wine
 

Instructions
1. Let the cheeses come to room temperature. 2. Combine all ingredients in a food processor and blend until smooth. 3. Store until ready to use.
To heat up- 1. Heat slowly in a small sauce pan until hot, but being careful not to let the fondue boil. 2. Served with roasted tomatoes and smoked onions.
You don’t have to use a really high quality or expensive goat cheese, but there are some great local goat cheeses you can pick up from the farmer’s market downtown. If you don’t want to roast your own tomatoes, you can also use sun-dried tomatoes packed in oil. They have a very similar texture and sweetness. We smoke our onions in-house, so those may be hard to duplicate at home. You could also use caramelized onions, which would be the closest. Also, try it with pretzel baguette-MJ bread co. makes some awesome pretzel products. This is a great item to feature for dinner parties.
