     Stuffed Zucchini

Ingredients
Olive oil, to brush baking sheet
2 (or more) zucchini, yellow crooked-neck squash
1 plum tomato per each zucchini/yellow squash
1/4 tsp. per each fresh, chopped oregano
Dash of white vinegar
Salt & pepper
Fresh mozzarella
 

Instructions
Preheat oven to 400 degrees. Brush a rimmed baking sheet with olive oil. Halve the zucchini/yellow squash lengthwise. Scrape out the seeds. (We think the thinner the zucchini, the better it tastes.) Place them on the baking sheet, cut side up. Season with salt and pepper.
In a bowl combine the tomatoes (seeded & chopped) with the splash of vinegar. Top zucchini with the tomato mixture- or omit this part- we like it without the tomato. Sprinkle with the chopped oregano. Bake until tender, about 20 minutes.
Heat broiler. Take the zucchini out, top with FRESH mozzarella cheese torn into 1 inch pieces. Broil until cheese is lightly brown and bubbling. This takes just a minute or two.
This is sooo good that the first time mom made it, we insisted that she make a second batch that night which we ate as our main dish.
