     Black Bean Salsa

Ingredients
One can black beans, rinsed & drained (organic is better)
1 small-med tomato, seeded & chopped
2 scallions, finely chopped
1-2 jalapeno pepper(s), seeds & membranes removed, minced
1/2 cup fresh chopped cilantro
2 Tbsp. freshly squeezed lime juice
1/2 tsp. coarse salt
 

Instructions
Mix all ingredients. Voila, you are done! Refrigerate up to one week. Great with chips, on food, or just eaten, like gazpacho.
