Mix all dry ingredients into a bag for shaking.
In a seperate bowl, beat eggs into milk.
1 at a time, shake chicken pieces in flour, then dip in milk, then shake in flour again.
Let sit for 5 min to bind the breading to chicken.
In large skillet, heat about 3/4 inch oil to Med. Add chicken skin side down and let cook for 10 min.
Turn chicken over, reduce heat to med. low, cover and cook for 15 min. or until juices run clear.
Remove lid and bring heat back to med high for 3-5 min to crisp up the bottom.
A DELICIOUS variation is to substitute 6 t. garlic and wine seasoning from The Melting Pot instead of the garlic salt and poultry seasoning!
