Build a flaming campfire. Generously grease both sides of a pie iron with non-stick cooking spray. Unroll crescent rolls and separate into squares, leaving every two crescent rolls together. There should be 8 squares.
Place one square on one side of the pie iron. Spoon some of the prepared taco meat and shredded cheese onto square. Top with another crescent roll square. Close iron and hold over flame for 3 minutes on each side, until squares are golden brown.
If desired, garnish tacos with salsa, tomatoes, lettuce and sour cream.
