1 egg (if making 3 lbs or more, add 1 egg for each 3 lbs.)
1/2 tsp salt
pepper to taste
1/4 to 1/2 c bread crumbs
Instructions
Break up bread and add the milk; let it sit for 10 minutes. In the meantime, put onions, garlic and parsley in a food processor and chop. After it is finely chopped, add the bread and milk, as well as the eggs, cheese, salt and pepper. Process until the ingredients are completely mixed. (This is called the slurry.)
After the slurry is finished, put the meat in a large bowl and add the slurry and 1/4 c of bread crumbs. Mix well. Form into balls and place on ungreased cookie sheet. Bake at 350 for 30-45 minutes. Test them by pushing on one -- if it indents, it needs more time; if it bounces back, it's done!
You can either add directly to sauce, or freeze.
