     Olive Garden Pasta Fagioli

Ingredients
1 lb lean ground beef
1 can red kidney beans, drained
1 cup diced onion
1 cup carrot, cut into bite sized pieces
1 tbsp white vinegar
2 cloves garlic, minced
1 can northern beans
1 - 15oz can tomato sauce
12 oz V-8 juice
 
3 stalks celery, chopped
2 cans petite diced tomatoes
1 tsp oregano
1 tsp basil
1/2 tsp thyme
1/2 tsp black pepper
1 1/2 tsp salt
8 oz ditalina pasta

Instructions
brown beef and drain fat - add onion, carrot, celery & garlic - simmer 10 minutes - add remaining ingredients excpt pasta - mix well and simmer for 1 hour - towards end of the simmering time, cook pasta & drain - add pasta to the simmering soup during the last 5 minutes
