     Winter Squash and White Bean Soup

Ingredients
1 Tbl Oil
1 cup onion, finely chopped
3/4 tsp ground cumin
1 clove garlic, minced
3 cups of butternut squash, peeled & cubed
1/8 tsp pepper
2 10.5 oz cans of broth
1 (14.5 oz) can Mexican style stewed tomatoes
1 can whole tomato, undrained, chop
 
1 can cannelloni beans, drained

Instructions
Heat oil in a large dutch oven aover medium heat. Add onion and the next 3 ingredients. Bring to a boil. Cover reduce heat and simmer for 30 minutes or until squash is tender.
Place 2 cups of squash mixture in blender, cover and process until smooth. Return squash puree to pan. Stir in beans. Cook over medium heat 5 minutes or until heated through.
