     Lemon pie with meringue

Ingredients
3 lemons
3 eggs
150 g sugar
80 g butter
1 tbsp corn starch
250 g flour
1 pinch of salt
125 g butter
 
1 egg
2 egg whites
140 g sugar

Instructions
Mix the eggs. Put the lemon juice, lemon zest sugar and starch into a pot and bring to boil. Cut the butter in small pieces, add to the warm juice. Once the butter is added, cool down a bit and add the eggs until it is becoming viscous. Fill into a container and let cool down.
Prepare a dough from the flour, butter, salt and the egg. Put the dough into a baking form and pre-bake for 20 minutes at 180oC/360oF.
Whip the two egg whites and 140 g of sugar until firm. Fill the lemon curd into the pre-baked dough, add the firm egg white on top of it.
Bake another 20 -30 minutes at 100oC/ 210oF.
