     Hash Brown, Bacon & Little Smokie Frittata

Ingredients
5 cups shreadded hash browns- thawed
1/2 cup butter, melted
2 cups shredded mozerella cheese
2 cups shredded cheddar cheese
12 pre-cooked little smokies- cut into bite-size pieces
8 pre-cooked bacon slices, cut up
1 cup milk
6 eggs
salt and pepper to taste
 
parsley flakes
1 Tblsp. chopped pimento
1 (4 oz) can of mushrooms slices

Instructions
Preheat oven to 425 degrees. Place hash browns in a lightly sprayed 9x13 inch pan and press down evenly to form the crust. Drizzle the melted butter over the hash browns and bake for 25 min.
In a bowl, mix the cut up meats, mushrooms, cheeses, salt, pepper, and pimento. Stir well and pour over the baked hash browns.
Beat together the eggs and milk, pour over the mixture. Reduce heat to 350 degrees and bake 30 minutes. Let sit a few minutes before cutting.
