     ANZAC Biscuits

Ingredients
1 cup plain flour
1 cup rolled oats
3/4 cup coconut
3/4 cup sugar
1 tsp bi-carb soda
1 tbsp cold water
2 tbsp golden syrup (be generous)
125g butter
 

Instructions
Preheat oven to 180șC fan forced. Combine flour, oats, coconut and sugar in a large bowl. Dissolve bi-carb soda and water in a small bowl.
Melt butter and golden syrup in a medium saucepan over medium heat until mixture just bubbles. Remove from heat and stir in bi- carb soda and water mixture. This will bubble even more.Quickly add dry ingredients and stir till combined.
Roll tablespoons of mixture into balls. Place on greased trays (leaving enough room for spreading). Flatten slightly with hand.
Bake for 14-16 mins or until light brown.
Serving Suggestions
Biscuits are best stored in a tin. If you do not have one, line the base and top of a plastic container with foil.
