     Pecan Crusted Catfish

Ingredients
4 catfish fillets
1 cup of all purpose flour
2 eggs
2 cups of milk
2 cups of pecans, ground fine
salt
fresh ground pepper
1 tsp of dill
1/2 tsp of smoked paprika
 
1 quart of cooking oil

Instructions
Mix dry ingredients together and place in a shallow dish. Wisk eggs and milk together and place in a separate dish. Place ground pecans in another dish.
Coat each fillet in the flour mixture first, dredge in the egg mixture second, and then coat with the nuts. Place on a baking pan and place in the refridgerator for 15 mins.
Heat the oil to 350 degrees in a heavy skillet. Place the fish into the hot oil. Cook for 4 minutes on each side.
Serve with smokey cheese grits or rice and your favorite veggies.
