     Ritzy Squash Casserole

Ingredients
4 C. sliced, crookneck yellow squash
1/2 medium Vidalia onion or onion flakes, if desired
Salt and pepper to taste
6 T. butter; melted
24-36 Ritz crackers; crushed
4-6 oz Velveeta cheese; cubed
1 egg; beaten
 

Instructions
Slice the squash into a large bowl; add onions, if desired. NOTE- You can saute the squash and onion in butter if you like, but it isn't necessary.
Toss egg, 4 T. of the melted butter, Velveeta, and squash together. Add 2/3 of crushed Ritz crackers. Mix thoroughly.
Put squash mixture into a casserole dish that has been sprayed with non-stick spray. Sprinkle with remaining Ritz crumbs; drizzle with remaining 2 T. melted butter.
Bake at 350°F for 30-45 minutes or until lightly browned.
