Preheat oven to 325 degrees. Heat skillet over
medium-high heat. Spray with olive oil. Add green
pepper and onion. Cook until tender, stirring
often.
Stir in broth, soup, undrained tomatoes, and
chicken. Stir well. Bring to a boil, then remove
from heat.
In greased 8x8 baking dish, layer 1/3 tortilla
pieces, chicken mixture, and cheese evenly, ending
with cheese on top (3 layers total). Bake uncovered
40 minutes, or until hot and bubbly.
Serving size is 1 cup. Per serving, 274 calories, 9
g fat, 54 mg cholesterol, 712 mg sodium, 25 g
carbohydrate, 4 g fiber, 3 g sugar, 22 g protein.
