     Albondigas (meatball soup)

Ingredients
2 lbs ground beef
3 potatos
4 carrots
4 zucchinis
2 eggs
2 tsp. Cummin
2 tbsp. Garlic powder
1 tbsp. Oregano
2 tbsp. salt
 
1 can tomato sauce
3/4 cup rice

Instructions
Start to boil water with the salt and can of tomato sauce. Fill up your pot about ½ way. The veggies and meatballs will fill up your pot fast.
Finely chop ½ the zucchini and 1 carrot. Mix the chopped zucchini, chopped carrots, 2 lbs ground beef, two eggs, cumin, garlic powder and ¼ cup rice in a bowl. Roll your ground beef mixture into little balls and as your roll each one just drop them into your boiling water.
Chop your remaining veggies in your desired size. Once the veggies are chopped drop them into the water along with the remainder of the rice. Reduce heat and let cook for one hour.
