     Skillet Chicken (Turkey) Enchiladas

Ingredients
1 lb. boneless skinless chicken breasts, chopped (substitute leftover shredded turkey)
1 green pepper, diced
½ cup Tastefully Simple Chipotle Queso Dip Starter (or your favorite salsa)
½ cup milk
8 oz. Velveeta Mild Mexican Cheese, cubed
10 flour tortillas
Shredded lettuce (optional)
 

Instructions
Cook and stir chicken in large skillet on medium-high heat until cooked through.
Add green pepper and cook for another minute. Reduce heat to medium-low.
Add salsa, milk and Velveeta. Cook and stir until Velveeta is completely melted.
Spoon mixture down center of tortillas and roll up. Garnish with lettuce.
