Ingredients
3 cups cooked and drained spinach (6 greens)
3 cups egg beaters (1 1/2 lean)
1 garlic clove (1 condiment)
4 ounces part-skim ricotta cheese (1/2 lean)
1/4 cup fat free parmesan cheese (4 condiments)
4 LC low fat cheese wedges
1/8 TSP salt (1/2 condiment)
1/4 TSP black pepper (1/2 condiment)
 

Instructions
Preheat oven to 375 degrees. In a large bowl, whisk together all ingredients until well mixed. Spray a 9-inch pie plate with cooking spray and fill with the spinach mixture. Bake for 30 minutes, or until browned and set. Let cool for 20 minutes, cut in wedges and serve.
Serving Suggestions
2 servings of 1 lean, 3 greens, 3 condiments, and 1 healthy fats.
