Meggie G's Famous French Silk Pie

Category   Desserts - Breads
Sub Category   None

Ingredients
8” pie shell (or Nilla wafers if making bite size version) – I prefer a graham cracker crust, but us
½ c. butter room temp.
¾ c. sugar
2 – 1 oz. squares of Baker’s chocolate
1 tsp. vanilla
3 eggs

Instructions
Cream butter and sugar together well. Melt the chocolate squares in the microwave 30 sec. at a time. Be careful not to burn the chocolate. Allow chocolate to cool slightly. Blend chocolate with vanilla. Then add chocolate mixture to the butter/sugar mixture.
Next add three eggs ONE AT A TIME BEATING ON MEDIUM SPEED 5 MINUTES AFTER ADDING EACH EGG BEFORE ADDING ANOTHER. This is VERY important because it is what makes the mixture creamy. A mixer comes in handy for this because you can add an egg, set the timer for 5 minutes, and walk away until it is time to add the next egg.
Turn the mixture into the pie shell (for a regular shell make sure you bake it in advance per the directions on the pkg. and it is cooled before you add the pie mixture).
Chill for 1-2 hours before serving (for a thicker version freeze - I like to freeze mine). Top with whipped cream and sprinkle with semi-sweet chocolate chips.
