     Pureed Pie Pumpkin (for pumpkin pie)

Ingredients
1 Pie Pumpkin (about 8” in diameter)
TOOLS NEEDED-
1 pumpkin carving knife or large serrated knife (I use a small pumpkin carving knife from a pumpkin
Ice cream scoop
Large microwaveable bowl
Hand blender stick (you can use other methods for mixing, but the stick blender works the best) with
 

Instructions
Wash pumpkin. Cut in half with pumpkin carving knife using a sawing motion. Scoop out seeds & stringy stuff with ice cream scoop. Remove the stem and put pumpkin into a microwaveable bowl. I use a large casserole dish with a lid. You may need to cut the pumpkin into quarters to make it fit. Just remember the fewer the pieces the easier it is. Put a couple of inches of water in the bowl, cover & microwave for 15 minutes on high. Check pumpkin and see if it’s soft, if not continue cooking in smaller 5 – 10 minute increments until pumpkin is soft enough to scoop out. This usually takes about 20 – 30 minutes total.
Once cooled enough to handle, remove from bowl & discard water, scoop out the pumpkin from the skin. It should separate easily if cooked enough. Put in a mixing bowl then puree with stick blender for about 2-3 minutes.
