     Carrot Bars Sharon's

Ingredients
1 1/2 c oil
2 c flour
2 c sugar
2 t soda
2 t cinnamon
1 t salt
4 eggs room tee
3 c grated carrots
Frosting
 
1/4 lb butter or margarine
1 8 oz pkg cream cheese
1 box powdered sugar
opt- coconut, pineapple
alternate frosting- good
3/4 c butter
8 oz cream cheese room temp
2 c powdered sugar
1/2 t vanilla, 1 tsp lemon juice

Instructions
Bake 350 9 x 13 pan 55-60 min. Depends on oven.
Sift flour sugar, soda, cinnamon and salt. Add eggs and oil, beat at medium til well combined. Gently mix in carrots, pineapple and pecans with a rubber spatula. Pour in greased pan. I freeze it without frosting. I like the second frosting variation. Frost cake after defrosting from freezer. Try making frosting in cuisinart.
