     Chicken with bacon, olives and Prunes

Ingredients
2 chx breasts, split into halves
2 cloves garlic, thinly sliced
1 med shallot, chopped
1 1/2 T crumbled dried oregano
1 t salt
1/2 t pepper
1/4 c red wine vinegar
1/4 c olive oil
1/2 c. dry white wine
 
2/3 c pitted prunes, halved
1/2 c spanish green olives
2 strips bacon, diced

Instructions
Combine garlic, shallot, oregano, salt, pepper, vinegar, oil and wine. Arrange chicken in baking dish and scatter prunes and olives. Pour marinade over and sprinkle with bacon. Bake 50 min, basting until cooked. Serve immediately. 350
Similar to Chx Marbello (Silver Palate). Capers might be good instead of shallot.
