     Salmon Salad Sandwich

Ingredients
6-7 oz boneless, skinless salmon
1/4 cup minced red onion
1 tbsp evoo
1/4 tsp fresh ground pepper
4 tbsp reduced fat cream cheese
8 slices pumpernickel bread (toasted)
8 sliced tomatoes
2 large leaves of romaine lettuce
 

Instructions
Combine salmon, onion, lemon juice, oil and pper in medium bowl.
Spread 1 tbsp cream cheese on each 4 slices of bread
Spread 1/2 cup salmon salad over cream cheese
Top with 2 tomato slices, a piece of lettuce and another slice of bread.
Serving Suggestions
Switch cream cheese with Greek yogurt
