     Portobello Pesto Burgers

Ingredients
Four 1/4 pound portobello mushrooms
1/4 cup sun dried tomato pesto
4 whole grain hamburger buns
1 large ripe tomato (8 slices)
1 log (4oz) fresh goat cheese (8 slices)
8 large fresh basil leaves
 

Instructions
Bake portabello mushrooms for 14 minutes at 425 degrees. Flip mushrooms, spread 1 tbsp pesto evenly on each side.
Bake 10 minutes until mushrooms are just tender.
Toast busn; place 2 tomato slices on bottom of each bun. Top with mushroom, 2 slices goat cheese, 2 basil leaves and top with bun.
Serving Suggestions
Add swiss cheese or avocado
