     Southern Banana Pudding

Ingredients
1/2 C sugar
3 tblsp flour
dash of salt
4 eggs
2 C milk
1/2 tsp vanilla extract
5-6 medium bananas
1 box Nilla brand vanilla wafers
 

Instructions
Preheat oven to 425. Combine sugar, flour, and salt in the top of a double boiler (if you don't have a double boiler, a glass bowl on top of a pot of simmering water will work). Mix in 1 whole egg and 3 egg yolks. Stir in milk and continue to stir constantly unil thickened.
Remove from heat and add vanilla. Spread small amount on bottom of 1 1/2 qt dish. Cover with layer of wafers. Top with a layer of sliced bananas. Pour about 1/3 of the custard over bananas, continue this for 3 layers.
For meringue- Beat remaning 3 egg whites until stiff but not dry, gradually add 1/4C sufar. Beat until you have medium peaks. Pile on top of pudding. I don't care for meringue so I just crumble more vanilla wafers on top of pudding.
Bake for 5 minutes or until meringue brows.
