Cream cheese icing. 4 oz cream cheese. 1/4 c softened butter. Cream together. Add enough icing sugar to make a smooth icing. Can be thined out with pineapple juice or milk.
I use thi for muffins as well. Have ecreased oil and sugar. Use whole can of pineapple (small) and added more flour and ome oatmeal and flax seed to bulk up fiber and make rise a little higher than you would want a cake.
