     Three Bean Minestrone Soup

Ingredients
1/3 cup dried chickpeas
1/3 cup dried kidney beans
1/3 cup dried white beans
1 Tablespoon olive oil
3 cloves garlic, minced
1 yellow onion, diced
dash of freshly ground sea salt
4 stalks celery, diced
4 tomatoes, chopped
 
2 carrots, diced
1 Tablespoon dried basil
5 cups filtered water
2 bay leaves
1 1/2 cups whole wheat orzo pasta, cooked al dente and rinsed

Instructions
Soak the dried beans together for one hour. Drain the beans and set aside.
In a soup pot warm the oil over medium heat. Add garlic and onion and salt and cook for 5 minutes. Add celery, tomatoes, carrots, basil and another dash of salt. Stir well.
Add the beans, water and bay leaves. Bring to a boil, cover and reduce to low heat. Simmer for 1 1/2 hours or until the beans are tender.
Remove the bay leaves, stir in the cooked pasta and serve hot.
