     Corn and Black Bean Salad

Ingredients
3 ears corn, husked and silks removed
1 can black beans
1/2 c sweet onion, chopped
1/4 C chopped green pepper
1/4 C chopped red pepper
1 T minced garlic
1 T minced cilantro
1/4 C olive oil
3 T apple cider vinegar
 
salt and pepper to taste

Instructions
Wrap each ear of corn in plastic wrap and microwave on high 3-4 minutes. Let cool. Cut kernels from cobs. In large bowl combine corn, beans, onion, peppers, garlic and cilantro. Set aside.
In small bowl, whisk together oil and vinegar. Pour over veggies; add salt and pepper and stir to combine. Serve chilled.
