     Chipotle Roll-Ups

Ingredients
3/4 lb ground beef
2 tbsp chipotle rup (or cayenne pepper)
1/4 tsp salt
1 cup corn
1 small red bell pepper, diced
1 1/2 cup colby and monterey jack cheese
1/4 cup cilantro, chopped
6 flour tortillas, warmed
Vegetable oil spray
 
1 cup guacamole

Instructions
Preheat oven to 450 degrees. Place ground beef, rub and salt in pan. Cook over medium-high heat for 5-7 minutes. Add corn and bell pepper, cook 2 more minutes. Remove from heat, drain if necessary. Stir in cheese and cilantro into mixture.
Spoon mixture into tortillas. Fold in ends of tortillas and roll tightly. Place rolls on pan. Spray with vegetable oil.
Bake 10-12 minutes or until roll-ups are lightly brown and crisp.
Serving Suggestions
Substitute chicken for beef; add beans; serve with salsa
