8 medium potatoes, peeled and cut in 1-inch chunks
1 cup evaporated milk
1/2 cup sour cream
1 tsp salt
1/2 tsp pepper
2 cups shredded cheddar
6 slices bacon
Sliced green onions (optional)
Instructions
Preheat oven to 350 degrees; Grease casserole dish.
Place potatoes in pot, cover with water, bring to
boil. Cook over medium-high heat for 15-20 minutes
or until tender. Put in bowl.
Mix in evaporated milk, sour cream, salt and pepper.
Beat with mixer until smooth. Stir in 1 1/2 cup
cheese and half bacon.
Pour in casserole dish. Back 20-25 minutes. Top with
remaining cheese, bacon and and green onions. Bake 3
more minutes until cheese is melted.
