3 Chicken Breast (Can substitute and/or add any meat/fish you desire)
3 links Italian Sausage
3 box 3 color pasta
1 pack Broccoli florets
1 Bell Pepper (Red, Yellow & Orange – I usually just use ˝ of each pepper)
˝ jar Jerk Seasoning
6 Garlic cloves – chopped fine or crushed
2 stalks Scallion (Green Onion) – chopped fine
2 jar Alfredo Sauce
2 lg spn Pesto
Vegetable Oil or butter
Optional- Basil and Parmesan Cheese to sprinkle on afterwards
Instructions
It is best to cut the chicken into strips or cubes and marinate in the jerk seasoning for approx. 2 hours or overnight.
Add salt/pepper and/or any other basic seasonings you desire.
For the sausage – just cut into bits and marinate in jerk seasoning (Longer the better)
In a skillet or wok, cook the chicken. (Can also be baked). Remove chicken from pan, drain excess oil, and then add the garlic and onion. Sauté till softens.
Add peppers, sauté for about 3-5 mins and then add broccoli. Mix chicken with the vegetables
In a large pot, bring to a boil enough water to cover the pasta. Salt or oil water, add pasta and cook until done. Drain water.
While pasta is cooking, get a sauce pan and combine Alfredo Sauce & Pesto (can add a little creamy Italian dressing to thin mix) on low heat. Stir often to blend.
Combine half of the sauce with the prepared pasta and blend. (If quantities are too much, transfer some of the pasta to a serving dish)
Add meat and vegetable mix to pasta
Pour remaining sauce and mix together.
