     Zucchini and Cherry Tomato

Ingredients
1 T olive oil
2 zucchini cut into 1 inch pieces
1 clove garlic minced
1/4 tsp each oregano and salt
pinch hot pepper flakes
1 1/2 c cherry tomatoes cut in half
pinch sugar
1 T thinly sliced top of green onion (the green part)
2 tsp red wine
 
Instructions
In a large skillet heat oil over med high heat. Saute zucchini garlic oregano an red pepper flakes for about 3 min.
Add tomatoe and sugar cook until tomatoes are shrivelled about 5 min
Stir in green onions and vinegar. 6 carb 2 fiber
