     Bean Salad

Ingredients
1/2 cup cooked chick peas
1/2 c cooked red beans
1/2 c black beans
1/2 c black eyed beans
2-3 celery stauks chopped
Chopped green onion
1 Red pepper chopped
1/2 c olive oil or other oil
1/4 c vinegar
 
1T oregano optional
1/2 c chopped parsley
1T garlic
salt and pepper to tast
(Choppe hot pepper very good)

Instructions
I usually soak the beans over night. Cook them till soft but not mushy. Then I freeze them so when I want to use them in cooking they are ready to use. I found I prefer the flavor of the smaller dry beans.
Mix all the ingredients together. Adjust flavor if necessary. Keeps 2 weeks. You can play with the ingredients mixing matching. You may add cooked cut green beans, corn
