     Afghanistan Rice or Bulgar

Ingredients
1/2 c corn oil
5 md onions chopped (4 cups)
2kilo beef cut in cubes (steak cooks faster)
1 kl carrots-cut up like matchsticks 2lbs
1 c raisins
1 c shelled pistachio's (peeled almonds are good too)
3 heads of garlic separated not peeled
4 c raw rice or bulgar
7 c water
 
2 t salt
1 t pepper

Instructions
Heat oil in a large pot. Add the onions and stir fry on medium heat for 2 min. Add meat and brown for about 15 min. Remove to a bowl leave oil in pot.
To keep from burning on the bottom I placed thinly sliced potatoes on the bottom of pot with the oil and fry till browned. Then add half of the carrots the meat the remaining carrots and sprinkle the raisins, pistachios and garlic over all.
Add the rice to cover everything and carefully pour in the water, salt & pepper. May add 2 t chicken soup powder. Bring to a boil and simmer about 10 min. Stir top rice lightly turn down the heat to low and cook for about 1 hour without stirring. If you can put a large serving platter on the pot and then carefully turn it over so the rice will be on the bottom with all the meat on top, it is a nice way to serve it.
It makes a lot so make sure you have company.
