Preheat oven to 250 and separate 4 eggs. Whisk eggs
whites.Spray pan(s).
Add ginger ale or champagne, salt, cinnamon,
grounded ginger to egg whites and mix.
Add sugar and pecans and mix. Fold until nuts are
completely coated. Spread evenly in pan and cook for
1 - 1.5 hours. Stir occasionally to prevent
sticking.
Nuts are ready when the liquid is absorbed and they
are dry.
