     Sugar Glazed Pecans

Ingredients
Preheat oven to 250 degrees
Separate 4 eggs
1/2 cup packed brown sugar
2 teaspoons of salt
2 teaspoons of cinnamon
1 teaspoon of ground ginger
1 1/2 cups of sugar
8 cups of pecans
1 tablespoon of vanilla extract
 

Instructions
Preheat oven to 250 and separate 4 eggs. Whisk eggs whites.Spray pan(s).
Add ginger ale or champagne, salt, cinnamon, grounded ginger to egg whites and mix.
Add sugar and pecans and mix. Fold until nuts are completely coated. Spread evenly in pan and cook for 1 - 1.5 hours. Stir occasionally to prevent sticking.
Nuts are ready when the liquid is absorbed and they are dry.
