     Unstuffed Cabbage Casserole

Ingredients
1 small head of cabbage (about 1 1/2 lbs)
1 cup boiling water
1 cup quick-cooking brown rice, uncooked
1/2 lb extra lean ground beef (9% fat)
1 tsp garlic, chopped
1/2 tsp salt (optional)
1 can (10.75 ounce) tomato soup
1/2 can water
Canola cooking spray
 

Instructions
Preheat oven to 350° F. Slice cabbage. In a skillet that has been sprayed with cooking spray, stir-fry cabbage until limp.
Spray a 2-quart covered casserole with cooking spray. Add 1 cup boiling water and rice to casserole. Cover while preparing the rest of the ingredients. Add the cabbage to the casserole.
Brown meat with garlic and salt in the same skillet used to stir-fry cabbage. Spread over cabbage
Mix soup with water; pour over all and gently stir to mix. Cover and bake for 55 minutes or until rice is cooked and cabbage is tender.
