1 can (4 ounce) sliced mushroom stems and pieces, not drained
2 tsp minced garlic
2 cups beef broth
4 cups medium-sized egg noodles
1 cup fat-free sour cream
Salt and pepper (optional)
Canola cooking spray
Instructions
Spray a large kettle or soup pot with cooking spray. Over medium heat cook the meat, onion, mushrooms and garlic together. Stir occasionally.
Once the meat is fully cooked, and the beef broth, egg noodles and sour cream. Turn the heat to high.
Once boiling, turn the heat down to low. Do not cover. Cook on low for 5 to 7 minutes until pasta is to desired doneness. Stir occasionally.
Remove from the heat. Let is sit for 4 to 5 minutes before serving. The broth will thicken as it sits. If desired sprinkle lightly with the salt and pepper.
